A recipe I found off the internet with my input

Time: about an hour (unless fully prepped)

Servings: 6

Level: Easy

Ingredients: (I found everything at Ralphs)

  • 1 pound of fresh/dried tagliatelle pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, chopped
  • 1 pound Italian sausage, casings removed
  • 1 pound frozen peas, thawed
  • 1 cup whole milk ricotta cheese (I used more)
  • 1 bunch of fresh basil leaves chopped (~3/4 cup)
  • 1/4 cup freshly grated Pecorino Romano cheese
  • 1 teaspoon salt

  • Boil salted water, add pasta and cook until tender
  • Drain pasta leaving 1 cup of pasta cooking water
  • Meanwhile, in a skillet heat olive oil + garlic and add in sausage
  • Use a wooden spoon to break the sausage into bite-sized pieces
  • Add peas to the pan
  • Add ricotta cheese with cooked pasta and toss to coat, adding cooking water slowly
  • Add basil, Pecorino Romano cheese, and salt

  • Might be easier to cut the sausage before putting it in the pan

  • Pretty tasty and filling
  • Very easy to make
