Tweaked the recipe off this site:

Time: 30 min prep, ~30 min baking, ~1 hr total

Servings: 5

Level: Simple


  • 5 green bell peppers
  • 1 pound ground beef (I used a very lean beef)
  • 1/3 cup chopped onion
  • 2 cloves garlic
  • 1 (14.5 ounce) can diced tomatoes (I used Kroger’s)
  • 2 tspoons Worcestershire sauce
  • 1/2 cup uncooked rice (or ~ 1 microwavable bag of rice)
  • 2 cups sharp shredded Cheddar cheese
  • 3/4 can Tomato Paste (I used Contadina)
  • Salt and pepper
  • Possibly other flavors to add to the taste (I added a bit of garlic powder)
  • French Fried Onions (not necessary)


  • Preheat oven to 350 deg
  • Cut the tops of the peppers and remove the seeds
  • Boil a large pot of salted water and cook the peppers in the boiling water for 5 min
  • In a large skillet, saute the beef, onions, and garlic until the beef is browned
  • Stir in the tomatoes, salt, pepper, tomato paste, and Worcestershire sauce and cook for about 2 more min
  • Remove from heat, and stir in the cheese and cooked rice
  • Stuff each pepper with the mixture and place into a baking dish
  • Bake for 25-35 min, and during the last 5 min of baking add french fried onions and additional cheese on top


  • Might be better to cut the bell pepper in half so more of it will be covered with the french fried onions and additional cheese (Also cutting the baking time)
