Ingredients:

  • 1 1/2 pounds (2 tenderloins 3/4 pound each) whole boneless pork
  • 1 tspoon olive oil
  • 1/4 tspoon ground black pepper
  • 3 large Granny Smith apples, cored and thickly sliced
  • 1 butternut squash (about 1 1/2 pounds), peeled, seeded and cut into cubes
  • 2 tblspoons brown sugar
  • 1/2 tspoon ground cinnamon
  • 1 medium onion, chopped (~1/2 cup)
  • 1 3/4 cups Swanson Chicken Stock
  • 2 tspoons all-purpose flour

Directions:

  • Preheat oven to 425 deg, and spray pan with vegetable cooking spray
  • Brush pork with oil and season with black pepper
  • Place pork in pan
  • Stir apples, squash, brown sugar, cinnamon, onion, and 1/2 cup stock in a large bowl
  • Add the apple mixture to the pan
  • Bake for 25 min and then remove the pork from the pan
  • Bake apple mixture for 15 more min
  • Stir the remaining stock and flour in a small bowl, and stir the stock mixture in the pan
  • Cook and stir until mixture boils and thickens
  • Serve stock mixture with the pork and apple mixture

Comments:

  • Might do well with more seasoning
