Ingredients:

  • 3 cups sweetened, shredded coconut
  • 4 large egg whites
  • 1/2 cup sugar
  • 1 tspoon vanilla/almond extract
  • 1/4 tspoon salt

Directions:

  • Preheat oven to 350
  • Toast the coconut (optional) – spread coconut on a baking sheet and toast for about 5 min
  • Whisk egg whites, sugar, vanilla, and salt together in a mixing bowl
  • Combine the coconut and egg white mixture
  • Shape the macaroons and place them on a baking sheet with silpat or parchment
  • Bake for 15-20 min
