Ingredients: (mainly from Walmart)

  • 4 cod fillets
  • 1 1/2 cups coconut milk
  • 2 tspoons grated fresh ginger
  • 2 tspoons curry paste

Directions:

  • Preheat oven to 400 deg
  • Season cod fillets with salt + pepper
  • In a saucepan, whisk coconut milk, ginger, and curry paste under medium heat
  • Pour a thin layer of sauce into a large baking dish
  • Place fish on top, pour remaining sauce into the pan
  • Bake for 20 min (cod should be fully opaque)
