Version of the Zucchini Tots from Tasty: Prep 20 min, Cook 20 min

Level: Pretty simple


  • 4 medium-sized zucchini
  • salt and pepper (1 tspoon pepper)
  • 3/4 cup bread crumbs
  • 3/4 cup cheddar cheese, shredded
  • 2 eggs
  • 1 tblspoon garlic powder


  • Preheat oven to 400 deg
  • Grate zucchini in a bowl and add salt
  • Allow zucchini to sit for the salt to draw out the moisture
  • Drain out the liquid from the zucchini
  • Mix in the bread crumbs, eggs, garlic powder, pepper, and cheddar cheese
  • Place small portions (small balls) of the zucchini mixture onto a greased baking sheet
  • Place into oven for 20-25 min or until crunchy


  • My zucchini balls weren’t as crispy as I wanted them, but that was because of my impatience – they were otherwise pretty tasty
