Ingredients:

  • 2 pounds boneless, skinless chicken breasts, cut into pieces
  • 1/2 tspoon salt
  • 1/2 tspoon pepper
  • 3 tblspoons flour
  • 2 tblspoons sesame oil
  • 2 garlic cloves, minced
  • 1 tblspoon low-sodium soy sauce
  • 1 tblspoon brown sugar
  • 1 tblspoon white vinegar
  • 1/2 cup low-sodium chicken stock
  • 2 tblspoons sesame seeds
  • 1 bag jasmine rice (got from Trader Joe’s)
  • 1 bag string beans (also from Trader Joe’s)

Directions:

  • Preheat oven to 400 deg
  • In a bowl whisk together chicken stock, brown sugar, 1 tblspoon sesame oil, garlic cloves, soy sauce and vinegar
  • Toss chicken with salt, pepper, and flour
  • Heat a large oven-proof skillet and add 1 tblspoon sesame oil
  • Once hot, add chicken in a single layer
  • Cook until golden on one side, flip until golden on the other side (chicken should still be slightly raw)
  • Pour chicken stock mixture and toss to coat
  • Place skillet in the oven and bake for 20 min (I didn’t use an oven-proof skillet so I just moved the chicken into a separate pan)
  • Remove and cover with sesame seeds
  • Serve with string beans + rice

Comments:

  • The chicken was surprisingly very tender
