Ingredients:

  • 1/2 cup vegetable oil
  • 1 cup buttermilk (or 4 tblspoons of the buttermilk powder + 1 cup water)
  • 3/4 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 large egg
  • 1 tblspoon hot sauce
  • salt and pepper
  • 1 cup Panko
  • 1/2 tspoon onion powder
  • 1/2 tspoon garlic powder
  • 1/2 tspoon dried basil
  • 1/2 tspoon dried oregano
  • 1 pound medium shrimp, peeled and deveined
  • 1/4 cup mayo
  • 2 tblspoons sweet chili sauce
  • 1 tblspoon honey
  • 1 tspoon rice vinegar

Directions:

  • Whisk mayo, sweet chili sauce, honey and rice vinegar in a bowl for the sauce and set aside
  • In a large bowl, whisk buttermilk, flour, cornstarch, egg, hot sauce, salt, and pepper
  • In another bowl, combine Panko, onion and garlic powder, basil, oregano, salt, and pepper
  • Put the shrimp into the buttermilk mixture, one by one coat in Panko mixture, and then place on a plate
  • In batches, add shrimp to a large skillet with heated vegetable oil and cook until golden and crispy
  • Transfer to a paper towel-lined plate

Comments:

  • This was one of my messier dishes, but the result was worth the effort
