Ingredients:

  • 2 packages udon noodles
  • 1/2 large onion, sliced
  • 2-3 cabbage leaves
  • 1 carrot
  • 2 shiitake mushrooms
  • 1/2 lb sliced pork belly, or pork chops

Yakisoba sauce:

  • 3 tblspoons Tonkatsu sauce
  • 2 tblspoons Worcester sauce
  • 1/2 tblspoon soy sauce
  • 1/2 tblspoon mirin (or 1 tspoon sake)

Directions:

  • Boil and then drain the udon noodles
  • Slice onion and cut cabbage into 1″ square pieces
  • Julienne the carrot (cut carrot into 3rds and then thinly slice)
  • Slice mushroom tops
  • Cut the pork belly slices into 1″ pieces
  • In frying pan, cook the onion and pork slices
  • Once meat is cooked, add cabbage and carrots and then add the mushrooms
  • Stir fry for about 2 min
  • Add udon noodles and the seasonings (Tonkatsu sauce, Worcester sauce, soy sauce, and mirin)
