Ingredients:

  • 6 bone-in, skin-on chicken thighs
  • 1 tblspoon Italian seasoning
  • Salt and pepper
  • 3 tblspoons unsalted butter (I just used PAM spray instead of butter)
  • 3 cups baby spinach, roughly chopped
  • 16 oz baby Dutch potatoes, halved
  • 2 tblspoons chopped fresh parsley leaves

For sauce:

  • 1/4 cup unsalted butter
  • 4 cloves garlic, minced
  • 2 tblspoons flour
  • 1 cup chicken broth
  • 1 tspoon thyme (I skipped this ingredient)
  • 1/2 tspoon dried basil
  • 1/2 cup half and half
  • 1/2 cup freshly grated Parmesan

Directions:

  • Preheat oven to 400 deg, and lightly oil/spray a baking dish
  • Season chicken with Italian seasoning, salt, and pepper
  • Melt 2 tblspoons butter (or spray) in a large skillet
  • Add chicken, skin-side down, and sear both sides golden brown
  • Place chicken in the baking dish
  • Melt remaining tblspoon butter (or again spray) in skillet
  • Stir spinach and cook until it begins to wilt
  • For the garlic parmesan cream sauce, melt butter in the skillet
  • Add garlic, stirring frequently, for about 1-2 min
  • Whisk in flour for another min
  • Whisk in chicken broth, thyme, and basil
  • Stir in half and half and Paresan for another 1-2 min
  • Top chicken with potatoes, spinach and cream sauce
  • Bake for 25-30 min
  • Garnish with parsley and serve

  • Definitely one of my favorite dishes
